About the Special Issue

This Special Issue addresses a critical gap in current research by integrating three interconnected pillars—sustainable food systems, nutrient retention technologies, and public health outcomes—that are often studied in isolation. Amid global crises like climate change (threatening 40% of food production), micronutrient deficiency (affecting 2 billion people), and high environmental footprints of conventional food systems (30% of global greenhouse gas emissions), the issue provides a holistic platform to advance scientific knowledge and actionable solutions aligned with global priorities (e.g., SDGs, climate action).

The topic is chosen to bridge the divide between “sustainability” (environmental focus) and “nutrition” (health focus)—a gap where low-carbon food processes may compromise nutrients or nutrient-dense crops may use unsustainable resources. It aims to disseminate research that links sustainable practices to nutrient preservation and improved public health, serving as a resource for policymakers, industry, and researchers tackling global food and nutrition challenges.
